• 400g flour (00 or bread preferred)
• 10g salt
• 4g yeast (1/2 tsp)
• 275g warm water (110 degrees, not boiling!)
• 1/2 tsp sugar
• 8g olive oil (2 tsp)
1. Bloom the yeast by combining yeast, water, sugar and letting sit for 10 minutes
2. combine flour & salt, then add to the foam yeast water (yum)
3. add olive oil, mix until no dry flour remains. You can add another TB water at the end if there is lots of dry flour in the bowl
4. cover tightly (clingy plastic or foil, not a towel because it will stick) and let rise up to 24 hours (12 hours if you have a warm location or in the summer time. If you put it in the fridge, you can wait 3 days for a very slow rise)
5. Tip out of the bowl onto a floured counter & divide into 2. Gently roll into ball shapes
6. prep 2 9 inch pans (nonstick work best) - pour 1TB oil into each pan, place the ball of dough in the pan and roll in oil to coat.
7. cover and let rise again for 2ish hours (again, warm space can speed this up)
8. preheat oven to 550 - it is super hot.... so if you've never gone that hot before and there is junk in the bottom it could smoke.
9. press dough into the corners of the pan, stretching gently and lifting up slightly to let bubbles out.
10. Top with your yummy toppings!
11. bake at 550 for 12-15 min
