Ingredients
  • 1 pound chicken, cut into bite-size pieces
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt
  • Pepper
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Fresh basil sprig, optional
  • 1 can (14 oz) tomatoes
  • 24 oz tortellini (1/2 of double package from Costco)
  • 1 container (7 ounces) pesto
Directions
  1. In a small bowl, stir together the paprika, Italian seasoning, and salt and pepper to taste. Toss chicken in seasoning mix to coat.
  2. In large pot, warm olive oil on medium heat. Add chicken and cook, stirring occasionally, until nearly cooked through. Add additional oil as needed. In separate pot, begin bringing water to boil for tortellini.
  3. When the chicken is almost cooked through, add in garlic, basil (optional), and tomatoes and saute until the chicken is cooked through. Reduce heat to keep warm.
  4. Follow package directions to cook tortellini.
  5. Add the drained tortellini back in with the chicken. Gently stir for 1-2 minutes and remove from heat.
  6. Stir in the basil pesto sauce and oil as desired. Season with salt and pepper and red pepper flakes if desired.
