Ingredients
  • 500 g flour
  • 3 g instant yeast
  • 5 g sugar
  • 313 g water
  • 10 g butter
  • 10 g salt
  • 1 egg (beaten with 1 teaspoon water for optional wash; can also use milk)
Directions
  • Mix dry ingredients except salt together. Add water and mix.
  • Let the dough sit covered for 20 min.
  • Add salt and butter and knead until smooth. Cover and let rest 10 min.
  • Fold dough and let sit for 30 min.
  • Fold dough and let rise for 60 min or until doubled in size (or overnight in the fridge and then let rest at room temperature).
  • Divide into 8 pieces and shape as desired. Cover and let proof 30 min or until about doubled in size.
    • Meanwhile, place pan for steaming in bottom of oven and preheat to 450°.
  • Brush on egg/milk wash if desired and score down the middle.
  • Add 1 cup of hot water to the steam pan and bake for 7 minutes. Turn the pan and bake for 7 more minutes or until 200° internally.
  • Cool and enjoy.
